Over the past years, Frank has been exploring anaerobic fermentation at his farm, La Indonesia, nestled in the highlands of southern Colombia. This lot was depulped, fermented in sealed bags, and then shade-dried, resulting in a cup that’s bright, juicy, and bursting with tropical fruit notes. Beyond coffee processing, Frank is deeply committed to sustainability, leading multiple habitat restoration projects on his land, a place we first visited nearly a decade ago.
