Vibrant and sweet with notes of cherry lollipop, strawberry jam, cacao nibs.
This competition coffee’s distinctive character is no accident. It is the result of exceptional growing conditions at Zarza Farm, the outstanding genetics of the Pacamara trees, and the Gasca family’s long history of coffee cultivation combined with their embrace of advanced processing techniques developed in this region of Colombia.
This lot was used to compete in the 2026 Irish Brewers Cup.
Coffee cherries were rested for 48 hours, then placed in sealed containers for extended anaerobic fermentation before being stabilised in temperature-controlled water baths, followed by sun-drying and final milling.
The result is a beautifully sweet, fruit-forward coffee with layered notes of juicy berries and cherry, unfolding into a wave of dark chocolate and finishing with exceptional length.
