This month we introduce an exciting fresh coffee from Ecuador. Grown by the farmer Grace Morales, this lot has a beautifully bright acidity and is bursting with tropical fruit notes that remind us of summer. Lemon sorbet, mango and cream all the way!
This is a honey processed coffee which means that after picking, the ripe coffee cherries were depulped and dried with the mucilage on for 28 days - allowing sugars and those beautiful fruit notes to transfer to the bean.
Grace owns the Cruz Loma farm in San Jose de Minas in the Pichincha region. The farm is surrounded by virgin jungle, home to a large number of species which can be seen as you wander across the land. Grace also grows many other fruit and vegetable crops, with banana and cedar trees providing shade for the coffee.
In the words of Caravela Coffee, the importers of Grace's lot, it is now clear that “shade over coffee plantations has a positive impact not only on soil health, organic matter content and water retention potential, but also on the improvement of nutrient cycling among vegetative species, crop microclimate conditions, increased biodiversity and even carbon sequestration schemes”. Agroforestry systems are an essential part of sustainable agriculture practices and they contribute to provide prosperity and resilience to farmers.
Grace enjoys processing her coffee in different ways to create varied taste profiles. She is passionate about high quality food products and wants her coffee to be something really special.
